whole wheat bulgur lg onion,Chopped water,Boiling lb tomatoes,chopped or 1*16*oz cn tomatoes,Diced 1/2 c lemon juice 1/4 t black epper salt Put cup of whole wheat bulgur and large chopped onion in a medium Pyrex bowl and cover with boiling water let these soak hours Drain well and add lb of fresh chopped tomatoes or one 16 oz can of diced tomatoes, 1/3 cup lemon juice (freshly squeezed tastes Al-Tomatat Maa 10 Servings 4 T olive oil md onions,chopped cl garlic,crushed T coriander leaves,finely -chopped c chickpeas,cooked c tomato juice c water 1/4 c white rice,rinsed t salt t pepper t allspice 1/8 t cayenne Heat oil in saucepan, then saute' onions and garlic over medium heat for 10 minutes Add remaining ingredients and bring to a boil Cover and cook over medium heat for 25 minutes or until rice is cooked Tu B'shevat Fruitcake Servings 1/2 c brown sugar 3/4 c flour,Sifted 1/2 t baking powder eggs c fruit,Dried c mixed nuts,almonds,walnuts pecans,etc (peanuts not recommended) Mix it all Pour into greased loaf pan Bake in preheated 350 degree oven until brown Stick a toothpick in center to check If it comes out clean, your cake is cake Turkish Imam Biayeldi Servings 1 1 1 1 sm or md aubergines (1 1/2 lb) lb onions,thinly sliced garlic cloves,chopped finely sunflower oil green pepper,thinly sliced (optional) good quality tomato juice oz tomatoes,peeled and chopped pepper t sugar lg bunch parsley,chopped lg tomato,sliced Cut aubergines in half lengthways Sprinkle with salt and leave for 30 mins Rinse and pat dry Preheat oven to 200 C (gas 6) To make stuffing gently fry onions and garlic in tbsps oil until soft Add the green pepper and tomatoes, seasoned with salt, pepper, and a little sugar Cook gently for about 15 mins and stir in the parsley Quickly shallow fry the aubergines in hot oil enough to seal them, turning to brown all over Drain on kitchen paper Make a deep slit along the length of the aubergine halves Open the slit and spoon in as much stuffing as the slit will hold Lay the aubergine halves close to each other in a baking dish and garnish with tomato slices Pour in enough tomato juice to almost cover the aubergines and bake for about 45 mins Serve at room temperature Turkish Menemen Servings T olive oil 1/4 lb tomatoes,skinned & chopped t marjoram,Dried 1/2 t sugar green peppers,seeded & chopped oz feta (or caerphilly),diced eggs,beaten lightly salt & pepper Heat the olive oil in a large frying pan.Add the chopped tomatoes with the marjoram and seasoning.Cook for twenty minutes, stirring occasionally, until most of the moisture has and season Cook for 4-6 minutes until the eggs are cooked to your taste Serve Turkish Mussels With Garlic & Walnut Sauce Servings 1 1 2 lb mussels seasoned flour eggs,lightly beaten sunflower oil for frying sauce sl stale white bread,crust remove cloves garlic,crushed T white wine vinegar oz walnuts,finely ground T olive oil salt Make sauce Soak the bread in water for 10 minutes Drain and gently squeeze out the water In a liquidiser whizz the bread with the garlic, vinegar, nuts and salt until smooth Gradually drizzle in the olive oil Taste and adjust the seasoning Clean the mussels well and rinse thoroughly Heat 1/2 " water in a large wide pan until boiling Add the mussels, cover tightly and shake over a high heat for a few minutes until they have opened Remove mussels from shell and reserve Carefully thread the mussels onto wooden skewers that have been presoaked in water for 30 minutes.Put on about mussels per skewer and dont pack too tightly Coat each skewerful first in seasoned flour, then in beaten egg and finally in flour again Make sure that it is coated thoroughly each time Fry in hot oil, turning occasionally with tongs, until golden brown Drain briefly on kitchen paper and serve immedietely with the sauce Turkish Spicy Turkish Eggs Servings onions,finely sliced yellow pepper,cored & sliced red peppers,cored & sliced cloves garlic,chopped chillies,chopped 1/2 t cumin seeds T oil eggs salt & pepper greek yoghurt Fry the vegetables and spices in olive oil until the peppers are soft and juicy Season with salt One at a time break the eggs into a saucer and then slip into the nest of peppers.Cook until the whites of the egg are set Serve from the pan with a dollop of yoghurt Tzatziki Sauce Servings cucumbers,peeled, seeded, grated,and well drained or cloves garlic,minced 1/2 t salt 1/2 t white pepper t white vinegar 1/4 c olive oil 16 oz plain yogurt In medium bowl of electric mixer, mix all ingredients except yogurt Add yogurt and pepper t cumin Heat oil in a saucepan; then stir-fry carrots, onions, garlic, and ginger over medium heat for minutes Add potatoes, tomatoes, and coriander leaves and stir-fry for another minutes Add remaining ingredients and bring to a boil Cover and simmer over medium-low heat for hour or until vegetables are well-done Yemenite Meat Loaf (Halabi Kebab) Servings 1/2 lb beef,Ground T flour T oil t salt t pepper T zhoug* T oil c finely onions,Chopped c mushrooms,Sliced c parsley,Chopped eggs Combine ground beef with flour, tbsp oil, salt, pepper and zhoug Form the meat mixture into a 10-inch loaf Make a well the entire length of the loaf Heat tbsp of oil in a skillet Saute together the onions, mushrooms and parsley until the onions are golden Place the mixture in the well of the loaf Lightly beat the eggs and pour over the vegetables Preheat oven to 350 degrees Pat the sides of the loaf together to close up the well, and wrap in aluminum foil Bake for 30 minutes The loaf may be served either hot or cold Yemiser Selatta (Lentil Salad) Servings 1/4 c lentils,dried T wine vinegar,red T oil t salt pepper,black lg shallot,large anaheim chiles Peel shallots, then cut lengthwise in half Seed chiles and cut into 1" x 1/8" strips Wash lentils under cold running water Simmer them in lightly salted water for 25 to 30 minutes, or until tender but still somewhat firm Drain and rinse
